We survived the first four days of Lent! Yay! What is it then, 36 to go? Is it bad that I'm already counting down the days to Easter? Sugar addictions... don't start!
My parents gave up chocolate (shocker!) so dad can't have chocolate chip cookies in his lunch. No cookies just isn't an option! Not in this household! So mom and I reached way, way back in the cupboard and found the oatmeal raisin cookie recipe.
Can't tell you the last time we made these. A little dusty, but boy did they hit the spot! Look how beautifully she rolled them out. I think she's hired!
Almost as good as chocolate chip....almost...
Oatmeal Raisin Cookies
Ingredients
- 1 cup shortening
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon almond extract
- 2 cups oatmeal
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 1/2 cups raisins
Instructions
Cream together shortening, brown sugar, and sugar.
Add eggs and almond extract. Beat well.
Stir in oatmeal, flour, baking soda, and vanilla extract.
Roll into balls.
Preheat oven to 350° F. Bake 12 minutes.
Cool completely on wire rack.
